MOONG DAL IDLI WITH COCONUT CHUTNEY

Ingredients for Idli:

  • 1 cup yellow moong dal
  • Salt as per taste
  • ½ packet Eno

Ingredients for Chutney:

  • Half coconut
  • 1 small piece of ginger
  • 2 cloves of garlic
  • 5 green chillies
  • ½ cup chana dal
  • Salt as per taste

Procedure:

  • Soak moong dal for 3 hrs and grind it into smooth paste.
  • Heat oil in pan add mustard seeds, jeera, dry chillies and curry leaves
  • Add this to batter add salt and Eno according to taste and mix it properly.
  • Take the idli pan Greece it will oil.
  • Pour this batter in the idli pan and steam it for 15 to 20 minutes.
  • For chutney grind all the ingredients in mixer.
  • Serve hot moong dal idli with coconut chutney.

Celebrate Diwali in a Healthy way

The biggest festival of the year, the festival of lights is nearing and you can feel it already with the tempting smell of traditional delicacies, the lightings all around, everything makes up for the Diwali spirit. Everyone wants to celebrate and have fun during Diwali.

 

Following are a few tips to keep this spirit & celebration healthy:

 

1- Be mindful when having your favorite sweets & snacks. Enjoying the delicacies in smaller quantities & choosing healthier options will help you feel lighter & healthier.

 

2- Try to stay away from processed packed food. Make your own snacks by using healthy flours and by baking instead of frying the dishes.

4- Avoid over-eating your favorite dishes. Manage what & how much you eat, have small portions of whatever you consume.

Roasted Poha (Flattened Rice) Chivda

Preparation Time: 5 mins
Cooking Time: 15mins
Total Time: 20 mins
Servings: 3

Ingredients:

3 cups Thin Poha
1 tbsp Oil
1 tsp mustard seeds
Few curry leaves
2 tbsp roasted Chana dal (Bengal gram dal)
2 tbsp peanuts
1 tbsp dried coconut slices
½ tsp turmeric powder
1 tsp powdered sugar
1 tsp chilli powder
A pinch of asafoetida (hing)

Instructions:

1. Roast the poha in a pan on medium flame for 5 minstill it turns crisp or microwave it for 1 min in an oven.
2.Turn off the flame and transfer the crispy poha to a large plate.
3.In a large deep pan, heat some oil on medium flame. Once it is hot, add mustard seeds, hing& curry leaves.
4.After the leaves turn crispy add chana dal, dried coconut slices and peanuts. Roast & mix them well till they turn crispy & light brown in color.
5.Now add powdered sugar, turmeric powder& chilli powder. Further add the roasted poha and gently mix well& switch off the flame.
6.Once the poha cools down completely, store the chivda in an airtight container.

Baked Chaklis

Preparation Time: 20mins

Cooking Time: 25mins

Total Time: 35mins

Servings: 4

 

Ingredients:

1 cup Rice Flour

½ cup Low-fat curd

2 tsp sesame seeds

2 tsp chili powder

2 tsp cumin (jeera) powder

1 tsp sunflower or any other healthy oil

A pinch of asafoetida (hing)

Water for kneading

Salt as per taste

Instructions:

  1. In a mixing bowl, mix all the ingredients properly. Knead a soft, smooth & moist dough and keep it aside for 20 mins.
  2. Place a baking paper on a baking tray and grease it with 1 tsp of oil.
  3. Add the kneaded dough of enough size to a chakli press machine and start making chaklis in spiral shape on the tray.
  4. Brush the chaklis with little bit of oil.
  5. Bake in preheated oven @ 180°C for 20 mins, till they turn golden
  6. Store the chaklis in an airtight container once they cool down.

Diwali diet plan will not be ruined and one can enjoy the low-fat chakli with the same taste & crispiness.

Soya Patty Recipe

Preparation Time: 25 mins

Ingredients:

Boiled soybeans 1 cup
Mashed potato 2
Chilli powder 1tbsp
Turmeric powder ½ tbsp
Coriander leaves finely chopped 2 tbsp
Finely chopped onion 2
Salt as per your taste

Instructions:

1. Take one cup of soybeans and soak them in water overnight.
2. Pressure cook the soybean and potato for about 4 whistles.
3. Take a large bowl to mix this pressure-cooked soybean, mashed potato, red chili powder, onion, coriander leaves, and salt.
4. Mix it well to form dough.
5. Make small balls from this dough and gently flatten them the way you do for making patties.
6. Heat the pan and grease it with oil.
7. Place the patties on the pan and roast till it turns golden brown.
8. Once done flip the patty and let this roast from another side too till it turns golden brown.
9. Follow the same process for remaining patties.
10. Serve your healthy patties with tomato ketchup or chutney.

Paneer Garlic Nuggets

Ingredients:

250 gms Paneer

1 tbsp cornflour

½ tbsp black pepper powder

½ tbsp red chili powder

1 tbsp garlic paste

1 tbsp red chili sauce

½ tbsp oregano

Butter

 

Instructions:

  1. Cut paneer (cottage cheese) in medium size cubes.
  2. Take a mixing bowl add corn flour, black pepper powder, red chili powder, salt, garlic paste, red chili sauce, dried oregano, and mix them properly.
  3. Add a little bit of water and mix it again.
  4. Put the paneer cubes in this mixture and coat it properly with the mixture.
  5. Leave it for 15 Mins.
  6. Heat the oil in a pan and place these marinated paneer cubes in it and fry them for 5 mins on low flame till they turn golden.
  7. Turn off the flame and serve them hot with any chutney or ketchup.

A good choice for proteins especially vegetarian as paneer is rich in protein, carbohydrates, and fats.

Cheese Carrot Toast

Ingredients:

2 grated carrots
1 cup grated processed cheese
4 toasted bread slices
Butter
2 tbsp chili sauce
Salt as per taste


Instructions:
1. Take 2 carrots wash them properly and peel them. Grate the carrot using the grater.
2. Mix this grated carrot with grated cheese, butter, add salt, chili sauce and mix it properly.
3. Meanwhile place the bread slice in toaster and toast it.
4. After toasting place this mixture on the toasted bread.
5. Take a pan add butter to it let it heat put your bread on it and cover it with a lid. Let it cook for 5 mins.
6. Your cheese carrot toast is ready.
